Please note that the vegetables used in this recipe are the vegetables that are commonly available in my location. In fact, the saluyot is actually hard to come by in fresh (tsambahan lang kumbaga). If you're in the Philippines, there are so many native vegetables you can choose from. Most common vegetables used in a #dinengdeng recipe are talong, okra, sitaw (talbos man or bunga) kalabasa (bulaklak man or bunga) ampalaya (dahon man or bunga), kamote (talbos man or bunga), malunggay (dahon man or bunga), alakon, sigarilyas, patani, pagda/parda, mushrooms, puso ng saging, labong, and saluyot. Take note, if you're adding a saluyot in your Dinengdeng I would recommend adding garlic as well to neutralize the sliminess of the saluyot. Otherwise, garlic is just an optional ingredient. And by the way, an authentic Dinengdeng recipe consists of only 5 or fewer vegetables so adding 5 or more different kinds of vegetables really depends on one's preference.
