Cube the bacon and cook in a pan over medium heat for 8-10 minutes, until slightly crisp. Remove bacon to a side bowl, leaving the grease in the pan. • 2. Cut the pork into bite-sized pieces and brown in 2-3 batches, ensuring a nice crust. Remove from pot. • 3. Quarter the sausage and quickly sauté for 6-8 minutes for nice browning. • 4. Add sliced onion to the empty pot, sauté for 2-3 minutes. Deglaze with red wine, scraping the bottom of the pan. • 5. Add 4-5 cups water and dried mushrooms. Bring to a solid simmer. • 6. Add a third of the cabbage to the water, all 3 meats, and some seasoning. Stir to combine, lower heat, and cover. • 7. After 5 minutes, uncover and repeat the process twice more until all ingredients are incorporated. • 8. Cover and simmer slowly for an hour, stirring halfway through. • 9. Drain the sauerkraut, add to the pot, and stir. • 10. The bigos is ready. While hot, transfer to jars and seal firmly. It should keep for up to 3 months in the fridge.
