Let's make every meal a moment to savor on 'Gussied Up'! • Lemon Curd • Ingredients: • 4 large egg yolks • 2/3 cup granulated sugar • 1 Tablespoon lemon zest • 1/3 cup fresh lemon juice • 6 Tablespoons salted butter • Method: • Make a double boiler by placing a glass bowl on a pot with 2 inches of water. Make sure the bottom of the bowl doesn’t touch the water. Turn the heat to medium. • While the water heats up remove the bowl from the pot and whisk together the egg yolks, sugar, and zest. Pour in the lemon juice and whisk again to combine. • When the water is simmering, place the bowl on the pot and stir using a high temperature spatula until it thickens enough to coat the back of a spoon, about 7-10 minutes. (You can also do this step in a microwave. Just check and stir every 30 seconds until it coats the back of the spoon) • Remove from the heat and stir in the butter.
