Jamie Oliver's Chicken Tikka Masala with a Grumpy Home Chef twist. • I have a number of Jamie Oliver’s books, and I have only cooked a few recipes of his. I love looking to get inspiration, and see how he combines different flavours. • When it comes to curries I usually buy a jar or a packet rather than make my own mix, but when I saw this recipe it seemed to speak to me. I did omit some ingredients and cooked the chicken a little differently, and we were still happy with the results – this is the way I cooked it. • Cook this on a weekend for a special curry meal, it looks like a lot of ingredients however hopefully you’ll have most of them in your pantry – remember if you can prepare the chicken the night before you will get an even better result. • • Ingredients: • For the marinade: • 1 tsp ground cumin • 1 tsp smoked paprika • 1 tsp garam masala • 1 lemons, grated and juiced • 1 thumb size piece of ginger, grated • 1 tsp salt • 6 tbsp Greek yoghurt • 800g chicken breast, cubed • • For the sauce: • 1 tsp smoked paprika • 1 tsp garam masala • 2 onions, finely sliced • 2 fresh chillis, finely sliced • 1 bunch fresh coriander, finely sliced • Olive oil • 2 tsp turmeric • 2 x 400g tins diced tomatoes • 1 chicken stock cube • 2 x 400g tins light coconut milk • Method: • Marinade: • 1. Toast paprika, garam masala and cumin in a small pan for 1 minute, then tip into a large zip lock bag. • 2. To the bag add lemon zest, juice, ginger, yoghurt, salt and chicken. Seal the bag and massage so the chicken is well coated. Place in fridge for a minimum of 2 hours, but preferably overnight. • Sauce: • 1. In a large casserole pan add oil, onions, chillis and coriander. Cook for approximately 20 minutes or until golden. Stir regularly. • 2. Add turmeric, paprika, and garam masala and cook for 2 minutes. • 3. Pour in tomatoes, chicken stock cube and 300ml boiling water. Simmer for 5 minutes. • 4. Stir in coconut milk and simmer for at least 20 minutes. • Chicken: • 1. Drizzle a pan with oil and when hot add the chicken (try not to add the marinade like I did). Cook the chicken through. • 2.
