Somlor Machu Kroeung, Cambodian Lemongrass Sour Soup, is a flavorful and aromatic sour soup: • Ingredients: • 1 1/2 pounds of pork spareribs • 4-5 cups of water • 1 1/2 tablespoons of tamarind ( or substitute with 1 tsp tamarind powder) • 1-2 tablespoons of fish sauce • 1/2 tablespoon of sugar • 1/2 teaspoon msg (optional) or 1/2 tablespoon chicken bouillon • 1-2 tablespoon of oil to sauté the garlic and lemongrass paste • 3 cups of mixed vegetables (such as water spinach, eggplant, and jalapeños) • 1 heaping tablespoon of prahok (fermented fish paste) • 1/4 cup of Kroeung paste (lemongrass, galangal, kaffir lime leaves, red pepper, and garlic paste) • Fold in fresh holy basil (if you can get some) • Sliced red chili and fresh herbs for garnish (optional) • Instructions: • 1. In a large pot, heat the oil over medium heat. Add the garlic and Kroeung paste and sauté for a few minutes until fragrant. • 2. Add the ribs and cook on medium heat until dry. Add tamarind, prahok, fish sauce. Bring to a simmer and cook for about 10 minutes or until dry. • 3. Add water and bring it to a boil for a couple of minutes. • 4. Add the mixed vegetables and cook until they start to soften. • 5. Season the soup with fish sauce, sugar, and tamarind powder to taste. • 6.
