Spinach and Ricotta Lasagna Easy Freezer Meal

We all want to make weeknights easier on ourselves. On this weeks episode of Dine it Frugal I wanted to share a simple, easy and very tasty Spinach Ricotta Lasagng. I batch make this lasagna often and freeze, so we can eat it during the week for dinners when I'm too busy to cook. • For this recipe you will need: • 250g Frozen Spinach, thawed and drain excess water • 500g Ricotta Cheese • 2 eggs • 1.5 cups Parmesan Cheese • 3 tsp. Thyme • 2 tsp. Rosemary • 400g Lasagna Sheets • Salt Pepper to taste • Sauce - • 1 tbsp. Olive oil • 1 Brown Onion, chopped finely • 4 cloves Garlic • 4 x 400g Canned diced tomatoes • 1/2 cup Heavy Cream • 1 tsp.
