You don't need a paella pan to cook paella, any skillet or even a large pot will do, and it's surprisingly straightforward to make. • Terrific festive party food! • NOTE ON CHORIZO - 45 millions just fainted at the sight of the chorizo in this paella. No it's not strictly authentic. But Australia would have a melt down if I excluded it (as would much of the rest of the world!). So it's IN!
