Watch us as we roast a 80lbs pig over hardwood charcoal on a rotary spit. • In this video which is part 1 of a 2 part series, we take you the steps we took to prepare our pig and mounted it on the spit. We chose to stuff our pig with herbs, garlic, onions and apples and slowly roast it until an internal temperature of 155ºF was reached. Boy let us tell you that the taste, tenderness and juiciness of the meat was just to die for as we fed a total of 51 guests. We received so many compliments that it was very hard to remain humble. • We've added some step by step instructions in this video so you can follow what we did. • Part 2 of the process will be out soon, so watch for it.
