Stuffed Pepper Casserole Recipe: • in a large non stick pan medium - high heat • 1 tsp. of olive oil • 1 medium white onion finely diced • 1 large red and green bell pepper finely diced • pinch of salt • saute 5 minutes • add 2 cloves of garlic finely diced stir 1 minute • mix in 1 Lb. lean ground beef cook 5 minutes • add 1 Tbs. Italian seasoning • 1/2 tsp. pepper • 1/2 tsp. red pepper flakes • 1 28 oz. can of diced tomatoes ( 796 ml. ) • 2 cups of cooked white rice ( 1 package Uncle Ben's Bistro Express, Basmati ) • 1 oz. soy sauce • 1 cup of fresh grated parmesan cheese • mix well, bring to a boil • while stirring cook at least 6 minutes to reduce some liquid, this is important or the casserole will be too moist • transfer contents into a 9 X 13 lightly greased baking dish • spread evenly 2 cups of grated Italian mix cheese on top • cover with tinfoil and bake at 375 F for 30 minutes • remove the tinfoil continue cooking until the cheese is golden brown, 10 minutes • Serve with garlic toast • Enjoy!
