Chef Michael Friedrich (@sushimerolln) is back with another quick and delicious seafood recipe. This week, Chef Michael takes us through a raw preparation for California Yellowtail with a beautiful Carpaccio recipe. Not only are these one of our favorite species to target on the water, but they're definitely one of our favorites in the kitchen as well. • This is an extremely fast and easy recipe that anyone who is able to get their hands on fresh fish should try out. Having a proper knife to yield the specifically thin cuts of fish is essential, and Chef Michael shows us how the 10-inch ‪@DexterOutdoors‬ Sashimi knife makes all the difference. Check out his Yellowtail Carpaccio recipe and let us know what other recipes you would like to see in the future and how this one turned out for you! • Ingredients: • California Yellowtail Loin (Can substitute any other raw sushi grade fish) • Shallot • Serrano Chili • Smoked Salt • Kimchi Ponzu • Scallion Olive Oil • Micro Greens • Radish Sprouts • Preparation: • Slice sashimi cuts from your Yellowtail loin (as thinly as possible). • Plate each of your Yellowtail slices and then follow up with a light torch on each of the pieces to add a smoky element. • Top with your Serrano Chili, Shallots, Kimchi Ponzu, Olive Oil, Mirco Greens, Radish Sprouts, and smoked salt. • Enjoy!
