Applewood Smoked Chicken Rub and Recipe

Hot or cold, Smoked Chicken is a great go-to dish for a dinner or a lunch! You can make it on all kinds of smokers, pellet grills or on charcoal • Serves: 4 • Food Prep Time: 60 minutes if you soak the chips or 20 minutes if you use a pellet grill or electric smoker. • Cooking Time: 90 minutes • • There are rubs and just about all are good if not great. But this is how I do it: • INGREDIENTS for the RUB: • • ½ cup paprika • • ½ cup salt, coarse or kosher type • • 1/3 cup onion powder • • ½ cup minced garlic (or granulated or powder) • • 2 Tbsp cumin • • ½ cup brown sugar • Applewood smoke (chips or pellets) if that’s what you’re working with. • METHOD: • • Mix all the spices together in a large bowl, except for the brown sugar. • • Then add the brown sugar and stir the mix until it’s well blended. • • Now, that’s a basic rub for just about any kind of meat. • • To make it more our taste for poultry, I add to the rub: • 2 Tbsp paprika • 1 Tbsp rosemary • 1 Tbsp red pepper flakes (because I like it a little spicy) • • INGREDIENTS for the chicken: • • 1 chicken, for roasting, 5 to 6 lbs • • See the rub recipe • • 1 tbs olive oil • • 4 or 5 sprigs of fresh rosemary • • ½ lemon • • 4 handfuls of apple-wood chips, if you’re not using a pellet grill • • METHOD: using pellet grill, electric smoker or a kettle grill with charcoal or briquettes • • If you’re using an electric smoker or pellet grill, follow the manufacturer’s instructions to reach 275oF. • • If you are using charcoal, get ready for the indirect way to grill. • • PRO-TIP: Have an extra chimney starter ready to go, if you need more charcoal to keep the temperature up. • • Pat the chicken with paper towels. • • YOU CAN BUTTERFLY THE CHICKEN OR COOK IT WHOLE, TRUSSED UP. EITHER WAY, IT’S GREAT. • • Rub the chicken with the half of the lemon and then drizzle the olive oil over it. • • Generously sprinkle the inside and outside with the rub. Then rub it into the skin. • • Put the rosemary inside the chicken and truss it with kitchen string. • To truss it, cross the drum-sticks and tie them with some string. Then tie the wings close to the body, with another length of string. • • When the heat is ready, if you’re using charcoal, sprinkle about half the apple-wood chips over the coals. Watch out for the steam and smoke. • • Place the chicken breast side down and cover, smoking it for 30 minutes. • Again, if you’re using charcoal, be sure that the chicken is not over the coals and that the holes of the dome of your grill are over the chicken. You will get the best heat circulation this way. • Add the remaining chips after 30 minutes of cooking breast side down. • • Turn the chicken breast side up. Use a meat thermometer to make sure that the temperature of the thickest part of the thigh is 165oF.
