Small Batch Sourdough Discard Peach Cobbler

2/3 bag of frozen peaches • 2 tbsp granulated sugar • 2 tbsp brown sugar • 1/2 tsp Cinnamon • 1 tsp lemon juice • 1/4 tsp vanilla extract • 1 tsp cornstarch • Sourdough Topping • 1 box Jiffy cake mix • 1 egg • 1/4 cup sourdough discard • 4 tbsp Kerrygold melted butter • Preheat oven to 425. Grease a small baking dish with non-stick cooking spray or butter, and set aside. • In a medium bowl, add the peaches, sugar, brown sugar, cinnamon, lemon juice, vanilla, and cornstarch. Stir well to combine. • Pour the filling into the prepared baking dish and bake at 425 for 10 minutes. • While the filling is in the oven, prepare the sourdough topping in a medium bowl. Whisk together the cake mix, egg, and add the sourdough discard. Stir to combine. Then add in the melted butter and continue to stir until well combined. • Remove the filling from the oven, and scoop portions of the sourdough topping on the surface of the peaches. Use a Spatula or the back of a spoon to slightly smooth the topping on the surface, while keeping a few pockets of the filling visible. • Sprinkle cinnamon and sugar over the surface of the sourdough topping. • Bake at 350 for 25-30 minutes, or until golden and bubbly.
