Yeast extract is a cheap and convenient substitute or replacement for yeast nutrient in home brewing and yeast culturing. To spoil the the end of that investigation beer can not be made that way. • The video at the end shows the reaction difference between a yeast culture made from 5-10% sugar and the presence of 5g yeast extract , or not, in 1 L of water. 1/3 of the amount of sugar was used in the yeast extract culture than in the sugar and water yeast culture. • The fizzing directly relates to the amount of yeast growth. Suspicion is surface tension being released or enzyme reaction.
