Cooked in under 25 minutes, you really cannot go wrong with my express version masala chicken which is bursting with flavour and truly ‘Brilliant’. Pair this with a paratha, naan bread, chapatti or some fluffy Basmati rice and you too will agree it is beyond brilliant! • • Recipe: (serves 4) • 550g chicken breast, diced into tikka sized pieces • 4 tbsp vegetable oil • 1 tsp cumin seeds • 1 medium onion, finely chopped • 1 tbsp ginger and garlic paste • 1 finger green chilli, finely chopped or made into a paste • 350g chopped tomatoes, blended • 1 ¼ teaspoons turmeric • ¾ teaspoon red chilli powder • 1 ¼ tsp cumin powder • 1 tsp coriander powder • 1 teaspoon salt or to taste • 30g butter • 1 ¼ teaspoon garam masala • 2 tbsp fresh chopped coriander • ¾ tbsp dried fenugreek leaves, crushed • • • Method • 1. Heat the oil in a saucepan, add the cumin seeds and sizzle in the oil for about a minute • 2. Add the chopped onions to the saucepan and cook until the onions are golden brown, this should take about 4-5 minutes on a medium to high heat • 3. When the onions are caramelized, add the ginger and garlic paste and green chilli followed by the tomatoes • 4. Add turmeric, red chilli powder, cumin powder, coriander powder, salt and butter and cook the masala for 4-5 minutes (cover the saucepan whilst cooking as masala will spit. Keep mixing occasionally) • 5. Once the masala is thick, fluffy and sizzling, add chicken pieces to the masala sauce and mix well, cook chicken in the masala for 4-5 minutes until chicken is perfectly cooked (mix occasionally) • 6. Add the final touches of fresh coriander, garam masala and dried fenugreek leaves, cook for a final 2 minutes • 6.
