Simple Chicken Kushka Biryani Rice

Chicken Kushka : • Ingredients- • For Chicken Stock : • Chicken bones - 400 to 500 grams • Oil - 1 tbsp • Ginger - 1/2 inch , crushed • Green chillies slit - 2 to 3 • Fennel seeds - 1/4 tsp • Cinnamon- 1/2 inch • Cloves - 2 • Water - 600 ML • For Kuska : • Basmati Rice - 300 ML (soaked in water for 45 mins ) • Oil - 2 to 3 tbsp • Cinnamon- 1 inch • Cardamom- 2 • Cloves - 2 to 3 • Onions - 1 large , sliced • Ginger garlic paste - 1 tbsp • Tomato - 1 large , sliced • Mint Leaves , chopped - 3 tbsp • Coriander leaves , chopped - 4 tbsp • Red chilli powder - 1 tsp • Salt - to taste • Curd - 75 ML , beaten • Green chilies , whole - 2 • Ghee - 1 tsp • Lime juice - 1 tsp • Chicken Stock - 500 ML • Method : • Soak basmati rice in water for 45 mins . After 45 mins , strain it in a colander and keep it aside . • In a pressure cook add oil , chicken , cloves , cinnamon, ginger and green chillies. (Do not wait for the oil to heat) • Roast the chicken on high flame for 1 min and medium flame for 2 mins. Add 600 ML water and bring to boil. Pressure cook the chicken on low flame for 3 whistles . • Let the pressure release by itself . Strain the chicken pieces with the colander and save the stock alone . • In another pressure cooker ,heat oil and add cinnamon, cardamom and cloves . • Add onions and fry on medium flame till they turn brown . • Add ginger garlic paste and cook for 1 min on low flame . • Add tomatoes, mint , coriander, chilli powder and salt . Sauté on medium flame for 3 mins . • Add curd and green chillies. Mix well , close on low flame till oil separates and curry thickens. • Measure 500 ML of stock and add to tue cooker . • Add the strained basmati rice and mix gently . Add lime juice and ghee . Gently stir it . • Pressure cook on low flame till one whistle . • Turn off the stove and let the pressure release by itself . • Serve hot with boiled eggs and onion raitha . • Suggestion : • -The same recipe can be followed using 300 grams of mutton bone. • I have used only bones . You can also use flesh and fat of the chicken/ mutton .
