Kolhapuri Sukka Mutton -Deliciously spicy this mutton curry is another favourite of the Kolhapuris. Sukha mutton is more loved by any age group. • KOLHAPURI SUKHA MUTTON • Ingredients • 750 gms mutton, cut into big pieces on the bone • Salt to taste • 4 medium onions • 5 tbsps oil • 4 tbsps grated dried coconut • 1 tbsp ginger-garlic paste • 1 cup finely chopped tomatoes • ¼ tsp turmeric powder • 1 tsp red chilli powder • 1 tbsp Kolhapuri masala • A pinch of garam masala powder • A pinch of green cardamom powder • Fresh coriander sprig for garnishing • Method • 1. Slice half the onions and roughly chop the remaining. • 2. Heat a pressure cooker, add mutton, 2 cups water and salt and cook under pressure till 6 whistles are given our or till the mutton is fully cooked. Strain and set aside. • 3. Heat 4 tbsps oil in a non-stick pan, add sliced onions and grated coconut and sauté till brown. Cool and grind with ½ cup water till smooth. • 4. Heat remaining oil in another non-stick pan, add chopped onions and sauté till brown. Add ginger-garlic paste, tomatoes, turmeric powder, chilli powder, Kolhapuri masala, ground paste and mix well. Add salt and mix well. Cover and cook till the mixture thickens. • 5. Add boiled mutton and mix well. Add garam masala powder, green cardamom powder and mix well.
