A delicious and flavourful soup made with veggies and masoor dal. • MASOOR DAL SOUP • Ingredients • 1 cup Tata Sampann Masoor Whole • ½ tbsp oil • 1 medium onion, chopped • ¾ cup chopped pumpkin • 1 medium carrot, chopped • 1 medium tomato, chopped • ½ tbsp finely chopped garlic • 4-5 coriander roots, washed • Salt to taste • 1½ tbsps butter • Burnt garlic for garnish • Chives for garnish • Method • 1. Add Tata Sampann Masoor Whole in a bowl and add sufficient water. Soak for 20-25 minutes. • 2. Heat oil in a non-stick pressure cooker, add onion, pumpkin, carrot, tomato, and garlic. Mix well and cook for 1-2 minutes. • 3. Break coriander roots and add to the cooker. Add soaked dal and mix well. • 4. Add salt, and mix well. Add 3 cups water and mix well. Place the lid on and cook till 4-5 whistles are released. • 5. Allow the pressure to settle completely. Blend the mixture using an electric hand blender till smooth. • 6. Add butter and mix well. Strain the soup into another pan, adjust seasoning and transfer to a serving bowl. • 7. Garnish with burnt garlic and chives.
