Serves 4 • Syns per serving: FREE • 4 skinless chicken breasts, cut into small chunks • 1 large red onion • 1 garlic clove, crushed • 1 tsp chopped fresh rosemary • 250g cherry tomatoes • small bag of salad leaves • 1/2 cucumber deseeded and sliced • 400g can of white beans such as cannellini, drained and rinsed • 1 tbsp balsamic vinegar or to taste • Preheat the oven to 200c, fan 180c, gas 6 • Put the chicken in a bowl with the onion wedges, rosemary, garlic and some seasoning and spray with low calorie cooking spray. Toss well and spread out on a non stick baking tray and roast for 10-15 minutes. • Remove from the oven and add the cherry tomatoes and cook for a further 10 minutes until the chicken is cooked through. • Put the salad leaves into a large serving bowl and scatter over the cucumber and beans. Top with the warm roast chicken and vegetables and drizzle over the balsamic vinegar and serve straight away. • Crumble 50g of reduced fat feta cheese over the salad for an extra tasty dish.
