Fontana Forni presents cooking an entire meal in one of our backyard pizza ovens. Read exactly how we did it below! • We are going to show you how to cook an entire meal inside of our Gusto wood-fired backyard pizza oven, as we have friends visiting from out of town who will be over this afternoon. • We are going to cook pork loin roast, potatoes, green peas, baguettes, and peach and blueberry cobblers. So, we’re going to cook the entire meal in our authentic pizza oven and are looking forward to it. • Roast Prep • You will want to make a rub for the roast. We are using some fresh sage and some fresh rosemary. We will also add some crushed garlic, black pepper, sea salt, and some hot pepper flakes. • Sprinkle the sea salt, black pepper, and hot pepper flakes over the roast, as well as the crushed garlic. With a mezzaluna, we first mince all the fresh herbs until they are finely chopped. Next, take the herbs and sprinkle them on top of the roast. • Drizzle some extra virgin olive oil over the top of the roast. Finally, using your hands, rub the oil into the herbs and spices so they cover the entire roast. • Backyard Pizza Oven Prep • It is important to preheat the oven. You can use some scrap wood and broken branches to get the fire going. Once lit, close the door so it creates a draft. Then, once it is burning, carefully add some larger pieces of wood. • Put the roasting pan inside the oven and preheat it until it is nice and hot. Once it is, carefully open the oven door and take it out. Now, pour extra virgin olive oil into the bottom of the pan until the bottom is coated to prevent the roast from sticking. • Next, take the roast and put it into the roasting pan. You should hear the roast sizzling. Put it back into the oven and close the door. • Potato Prep • While the roast is in our authentic pizza oven, we will peel the potatoes and dice them into bite-sized pieces. Take the potatoes and put them into another roasting pan. Season the potatoes with crushed garlic, black pepper, sea salt, chopped up rosemary, and some sun-dried tomatoes. • Carefully pour some extra virgin olive oil over the potatoes and mix using your hands until the potatoes are well-coated. Now pour some broth over the potatoes and place into the backyard pizza oven on the top rack. Cook the potatoes until they are nice and brown and fork tender. • Now is a good time to check the roast and flip it over. The bottom should be nice and brown. Let the other side brown. Once it does, then we will add some white wine and some broth. • French Baguettes • We usually have a baking day and make a lot of bread that we freeze to us later. That is what we did today. We took some of the French bread out of the freezer. Since the backyard pizza oven is nice and hot, it is perfect to heat up the baguettes, by placing them on the top rack. Once the bread is warmed, remove it from the oven. • Pork Roast • Now that the pork loin roast is browned on both sides, and the white wine and broth we added has evaporated, we are going to pour in the rest of the white wine and the juices from the marinade. Put the roast back into the oven and continue baking it until it is done. Once it is done, we will take the roast out and baste it while it rests. • Peas • You can cook just about anything in authentic pizza ovens, including peas and other vegetables. Simply put your favorite vegetables, seasonings, and herbs into a pan and place in the oven. Cook until they reach the desired doneness. • Cobbler Prep and Cooking • Since the backyard pizza oven is already hot, we are going to make some cobbler in it too. We are making a Southern peach cobbler and a blueberry cobbler using a simple recipe: • • 1 cup of butter • • 1 cup of flour • • 1 cup of sugar • Combine until the topping is well-mixed. Since we are making two cobblers, we double the recipe. Take a baking dish and pour the fruit in the bottom. You want to fruit to cover the entire bottom of the baking dish. Next, sprinkle the mixture on top. • The cobblers will go into the oven after we remove the pork roast. Bake on the top rack at 350 degrees F for about an hour until the topping is brown and the fruit is bubbling.
