Chef Motokichi Yukimura, all-around happy person and inventor of the Kichi Kichi Omurice shows Shizuka how it’s done, before putting her skills to the test. • Chef Motokichi’s Kichi Kichi Omurice is made with chicken, shimeji mushrooms, chopped onion, soybeans, butter, rice, and demi-glace sauce; and topped with the gooiest omelet and a sprinkling of dried parsley. The toughest part about making Japan’s most difficult omurice is getting the texture of the omelet right. It should be just barely cooked on the outside, so the center is still gooey and moist, and when it unfolds over the bed of fried rice it’s more akin to a sauce than an omelet. • Make your own omurice at home with a Kichikichi Omurice set: http://kichi2.net/free/omurice • Check out the Kichikichi Omurice YouTube channel: / motokchi • Za Yoshokuya Kichikichi (ザ 洋食屋 キチキチ) Access Info • 20 minutes from Kyoto Station.
