Let's dive into the preparation! • Ingredients: • Ash Gourd (Kumbalanga) • Onion • Tomato • Ginger • Green Chilli • Curry Leaves • Coconut • Turmeric Powder • Chilli Powder • Coriander Powder • Salt • Small Onion • Oil • Preparation Steps: • 1. Chopping and Mixing: • Cut the ash gourd into small pieces. • Add chopped tomato, green chilli, onion, curry leaves, and ginger to the ash gourd. • Add ½ teaspoon turmeric powder, 1 teaspoon chilli powder, 1½ teaspoons coriander powder, 1 teaspoon salt, and 2 tablespoons oil. • Mix everything well and let it sit for 15 minutes. • 2. Preparing Coconut Milk: • In the meantime, prepare the coconut milk. • Extract 3 cups of second coconut milk and 1 cup of first coconut milk. • 3. Cooking: • After 15 minutes, add the second coconut milk to the ash gourd mixture. • Cook on low flame until the ash gourd is tender. • Once cooked, add the first coconut milk and bring to a boil. • Turn off the flame once it starts boiling. • 4. Garnishing: • In a small pan, heat oil and sauté small onions until golden brown. • Add curry leaves and sauté for a few more seconds. • Add this garnish to the curry. • Enjoy this delicious Kumbalanga Curry with steamed rice or your favorite Indian bread.
