Let it Jazz! • Enable subtitles in your language! 💬 😉 • Ingredients: • 2 potatoes; • 2 eggplants; • 1 onion, divided in two; • 1 tsp. fresh thyme; • olive oil. • For the minced meat sauce: • 500 g. ground beef; • 2 garlic cloves; • 1 tbsp. tomato paste; • ½ tsp. cinnamon; • 1 tsp. black pepper; • 1 tsp. salt; • 250 ml. tomato puree; • olive oil. • For the béchamel: • 120 g. butter; • 120 g. flour; • 1 l. milk; • ½ tsp. nutmeg; • ½ tsp. black pepper; • 1 tsp. salt; • 30 g. parmesan for sprinkling. • Instructions: • Cut the potatoes into slices about 5 mm thick. Cut one half of the onion into half moons and in a large bowl together with the potatoes season them with 1 tsp. salt, 2 tbsp. olive oil and ½ tsp. fresh thyme. Grease the bottom of a tray with 2 tbsp. olive oil and arrange the potatoes with the onion. Roast in a preheated oven at 180C/356F for 20 minutes. During this time, cut the eggplants into slices of the same thickness, season with 3-4 tbsp. olive oil, 1 tsp. salt and the remaining fresh thyme, arrange on the roasted potatoes and return to the oven at the same degrees for 20 minutes. Prepare the minced meat sauce by finely chopping the remaining onion and frying it in 2 tbsp. olive oil in a skillet over medium heat. Add the mashed garlic and mix well. Then add the cinnamon and tomato paste and mix again. Add the minced meat and, using a wooden spoon, mix it well to make it as fine as possible. Season with 1 tsp. salt, 1 tsp. black pepper and add the tomato puree. Stir well and allow to reduce slightly, then remove from heat. Make the béchamel by melting the butter and adding the flour to it. Using a wire whisk, mix well. Start adding the milk gradually, mixing very well after each addition. Finally, season with 1 tsp. salt, ½ tsp. nutmeg and ½ tsp. pepper. Spread the minced meat on the roasted vegetables and pour the béchamel on top. Sprinkle the grated Parmesan evenly on top. Roast at 180C/356 for 25-30 minutes, or until a golden crust is obtained.
