Cooking a Silkie Black Chicken

Silkie chickens are a prized breed of chicken with a beautiful and fluffy (yet misleading) set of white feathers and black skin. The chicken flesh itself is a dark bluish-gray or even black, and the bones are also black. Ultimately, however, they taste like...well, chicken. The one difference I noticed is that they taste a bit gamier, likely due to the fact that unlike the factory-farmed chickens we are used to, they are free-range and naturally raised. • The mayonnaise trick is odd, I know. But I've been using mayo for years to get extremely crispy and buttery roasted potatoes, and if you consider the fact that it's just oil with a bit of egg, it makes more sense.
