LARGE FAMILY DINNER: DAD DOUGHERTY’S CHILI • #LargeFamily #Recipe #DoughertyDozen • Join Dad Dougherty as he makes Chili! • Ingredients: • -6 Pounds Ground Meat • -4 Packets Chili Seasoning • -3 Bell Peppers (any color), Seeded and Chopped • -2 handfuls Spinach • -2 Tablespoons Minced Garlic • -2 Onions, Chopped • -2 Big Cans, or 4 Regular Cans, of Stewed or Crushed Tomatoes (with the added Seasonings if you can find them) • -3 Cans Rotel • -4 Cans Italian Style Diced Tomatoes • -2 Cans Tomato Paste • -2 Cans Dark Red Kidney Beans • -2 Cans Light Red Kidney Beans • -2 Cans Corn (Optional) • Directions: • 1. Add Tomato Products to Crockpot • 2. Drain and Rinse Kidney Beans and add to Crockpot • 3. Blend onions, spinach, garlic and peppers into a paste, add 3 Tablespoons EVOO and blend then dump in the sauce • 4. Brown meat and mix in Chili Seasoning Packets • 5. Drain any excess grease from meat and add to chili • 6. Cook on high for 3 hours or medium for 4-5 hours • 7. Add cheddar to top, let melt and serve with Salad and Cornbread. • Bon Appetit! • *We make extra and use the leftovers for Chili Cheese Dogs another night! Just make hot • dogs and top with chili and cheese. YUM! This also freezes really well to save for a later date.
