Armenian Basturma recipe • ▶️ingredients • 70.5 beef fillet (2 kg) • A pack of any kind of salt • For chaman (fenugreek) • 1/2 cup ground fenugreek • 1/2 cup paprika • 1/2 tsp cayenne • 1/2 tsp black pepper • 1/2 tsp cumin • 3 cloves garlic • 1 1/2 cup water maybe more • Directions • Step #1 • Generously sprinkle the bottom of your pan with salt and place the meats in it • Then again, generously sprinkle the salt all over the meats, making sure to cover them entirely • Cover the pans with lid or plastic wrap and place it somewhere cool for 2 days • Once in awhile check and see if there are parts that absorbed all the salt, add more to cover that part • Step #2 • Wash and pat dry the meats, very well • Wrap with a few layers of paper towel and put under heavy press for 1 day • During that time , check and see if the paper towel is moistened, change and re wrap it again with new dry paper towel • Step #3 • Unwrap and hang the meats to dry for 2-3 days • • Step #4 • Cut and remove any overly dried parts from the meat • Generously spread the fenugreek paste all over the meats • Hang to dry for another 2-3 days • Slice thinly and enjoy! • ————————————————————- • Բաստուրմա • ▶️բաղադրիչներ • 2 կգ տավարի ֆիլե • 1 տուփ ցանկացած աղ • Հացահամեմի համար (չաման) • 1/2 բ աղացած հացահամեմ • 1/2 բ կարմիր պղպեղ • 1/2 թ.գ կարմիր կծու պղպեղ • 1/2 թ.գ սեւ պղպեղ • 1/2 թ.գ քիմիոն • 3 պճեղ սխտոր • 1 1/2 բ ջուր (կարող է ավելին) • • Քայլ #1 • Ծակծկել ու աղապատել, բոլոր կողմերից • Թողնել սառը տեղում 2 օր, աղն ավելցնել եթե անհրաժեշտ է • Քայլ #2 • Աղաջուրը լվանալ, չորացնել, փաթաթել հաստ անձեռոցիկով և դնել ծանրության տակ 1 օր։Այդ ընթացքում հետեւել եթե անձեռոցիկը խոնավանա փոխել այն նորով։ • Քայլ #3 • Հեռացնել թուղթը եւ կախել սառը տեղում չորանալու 2-3 օր։ • Քայլ #4 • Կտրել բոլոր սպիտակած չոր մասերը եւ պատել հացհամեմի (չամանի) քսուկով և կախել սառը տեղում չորանալու 2-3 օր։ • • #Armenian #Basturma #բաստուրմա #бастурма #basturma recipe #how to make basturma #how #easy to make #delicious #recipe #ինչպես պատրաստել բաստուրմա #ապուխտ #չաման #համեղ բաղադրատոմս#как приготовить бастурму • • • • YouTube 👉🏻 • Armenian Basturma Recipe/Բաստուրմա/ А... • Instagram 👉🏻 https://www.instagram.com/p/CL45bZbnr...
