Lahmajun or Lahmacun • It’ a super easy to make flat bread ,you can use roti as a base Ir yaw Ready made pizza doughas a base I topped It with a spicy eggplant mixture and pickled 🧅 • This is a super delicious flat bread that might have originated in Southern regions of Turkey, Sanliurfa or Gazinatep, there is also a claim from Armenia that the dish originated in Aleppo, Syria and it belongs to them and that it was introduced to Turkey much later • No matter who created it, I have to tell you this dish tastes awesome • The name means ‘Meat Bread’ because it has minced meat however today’s version is a vegetarian one, made with 🍆 eggplants. It’s absolutely delicious and perfect for a meal or snack • A simple dough is rolled thin, a flavorful paste of eggplants, tomatoes and pepper is smeared on it; and the whole thing is baked. • Just like Napoleon Pizza, this is also folded in half and enjoyed as a casual meal • • Recipe • Dough • 2 cups flour • 1 tsp yeast • 1 Tbsp sugar • 2 Tbsp olive oil • 1 cup water • Make dough with the above ingredients and let it rise for an hour • 1 eggplant • 2-3 tomatoes • 1/2 onion • 1-2 garlic cloves • 1 Tbsp paprika • 1 Tbsp cumin powder • Handful of herbs • Topping • 1. Cut an eggplant into cubes • 3. Sauté eggplants in some oil • 4. Process till it’s chunky in a food processor along with tomatoes, onions, garlic paprika, cumin powder, fresh oregano, mint, dill • Assemble • 1. Roll out the dough super thin • 2. Smear with the egg plant mixture • 3. Bake for 12-15 mins till the edges are crispy • 4.
