Boxty is a traditional Irish potato pancake that originates from County Mayo in Ireland. I understand many cultures have their own version of potato pancakes (I know there are at least three different versions of Korean potato pancakes I can think of). Boxty tastes like a hybrid of potato pancakes as we know here in the US and hash browns we also are accustomed to here in the States. It's made with a combination of raw grated potatoes and cooked mashed potatoes.
