This delicious recipe won 2nd place 🥈 in more than a few Chili Cook Offs in the 80’s and 90’s! Back then beans were not allowed! I’ve added them here. If you don’t eat meat, just leave it out, add a can of pinto beans and use vegetable broth. I hope you enjoy my 38 yr old chili recipe! Oh! Grind. Save for later. • (Or use 1 tsp ground cumin) • Sauté in 1 TBS olive oil until onion is translucent: • 1 large yellow onion chopped • 1 large green bell pepper chopped • 1 large red bell pepper chopped • Add: • 4 cloves minced garlic • 1 lb lean ground beef • While beef browns ADD: • 1 tsp garlic powder • 1 tsp onion powder • 1/2 tsp coriander • 1/4 tsp cayenne • 1/4 tsp salt • 1/4 tsp pepper • ADD: • 1/2 small can tomato paste • 1 15oz can diced tomatoes • 1 1/2 quarts beef broth • (I make mine with Better Than Bouillon) • 1 cup water • 3 TBS chili powder • 1 tsp ground cumin • 2 tsp Worcestershire sauce • 1 chipotle pepper in 1 TBS adobo sauce chopped • 1 4oz can diced green chilies • 2 15oz cans kidney beans drained • 1 tsp sugar • Cover. Bring to boil. Remove cover and simmer uncovered 30-40 mins. • Enjoy! Really good with cornbread!
