Authentic Karnataka Style Obattu Recipe • http://cookerystudio.com/2017/03/16/h... • Ingredients • Oil • Ghee • --Dough • 1 Cup Maida • ¼ Tsp Turmeric • Pinch Salt • 2 Tbsp Oil • Water • --Stuffing • 1 Cup Toor Dal • 1 Cup Jaggery ( I prefer little less than 1 Cup) • 2 Poppy Seeds • 2 Tbsp Coconut • Instructions • --Dough • Mix all the dry ingredients listed under dough section • Incorporate water gradually to get loose dough consistency ( Check video) • Add oil to dough, give a good mix • Let the dough rest for minimum one hr ( Check Notes) • --Stuffing • Rinse Toor dal and soak for 30 minutes • Cook dal in a pot with 2 to 3 cups of water, don't use pressure cooker ( Check notes) • While dal is getting ready, make jaggery syrup. Add 2 to 3 tsp of water to jaggery and boil till it gets melt and gets a syrup consistency ( check notes) • Stop cooking dal before the pulses of Dal starts to break ( Check Notes) • Now add Jaggery syrup, Poppy seeds, and coconut; give a good mix and cook for 2 to 3 minutes • Turn off the gas. • Transfer it to a mixer jar and grind it to a fine paste, completely ,Don't let the mixture completely, Grind when it is still warm and hot. • --Dumplings • Make bigger lemon size dumplings from the ground paste. • --Forming Poli • Take plastic sheet which has a slippery texture; I prefer to cover. • Apply generous amount of oil on plastic sheet • Take a bit of Maida dough, by this time it should have the elasticity texture. • Spread the dough evenly and place the dumpling in the middle, cover the dough (outer layer) evenly around the dumpling • pat them gently and form a round shape • --Cooking • Transfer carefully to your hands ( Chek video), place it on hot Tawa drizzled with oil. • Cook both the sides till you get brown spots in medium low heat. • Serve them with Ghee and Enjoy your festival. • Notes • Let the dough rest minimum one hr, the more its better.
