Arachuvitta Sambar Recipe No.: 73 • Arachuvitta Sambar is a traditional and an authentic way to make sambar in Tamil Nadu. ‘Arachuvitta‘ in Tamil means ‘Freshly Ground’. The measurements given in this recipe yields for 4 persons. • Ingredients: ( 1 cup = 250ml ) • Tamarind - half of 1 lemon sized • Toor dhal - ¼ cup • Small onion, peeled - 5 • Tomato, chopped - ½ • Drumstick, chopped into 2 pieces - ½ • Carrot, chopped into cubes - ½ • Potato, chopped into cubes - ½ • Turmeric powder - ⅛ tsp • Salt - to taste • Asafoetida powder - ½ pinch • Coriander leaves, chopped - 1 tbsp • Oil - 1 tsp • Coriander seeds - 1 tbsp • Channa dhal - ½ tbsp • Whole black pepper - ¼ tsp • Fenugreek seeds - ⅛ tsp • Dried red chilli - 1 • Coconut, grated or chopped - ⅛ cup • Mustard seeds - ½ tsp • Green chilli, slit - ½ • Curry leaves - 10 • Method: • 1. Wash toor dhal and add it to pressure cooker. Add turmeric powder, water to immerse it and pressure cook till its done. • 2. When its done, mash it well and keep aside. Soak tamarind in water for few minutes and take extract. • 3. Heat ½ tsp oil in a pan and add coriander seeds, channa dhal, whole black pepper, fenugreek seeds, dried red chilli. Roast it till it becomes light brown color. • 4. Remove from fire and allow it to cool. In a mixie jar, add roasted items, coconut, little water and grind it into a smooth paste. • 5. Heat remaining ½ tsp oil in a kadai, add mustard seeds. When its splutters, add green chilli, curry leaves and fry. • 6. Add small onion and sauté. Add tomato and sauté. • 7. Add all vegetables and sauté for 2 minutes. Add ½ cup water and allow it to cook till all veggies are done. • 8. After its done, add tamarind water, salt, asafoetida powder and mix well. Allow it to boil for 5 mins in medium flame. • 9. Add mashed toor dhal and mix well. Allow it to boil for 1 minute. • 10. Add ground paste and mix well. Add water according to correct consistency. • 11. Allow it to boil for 2 minutes in medium flame. Switch off gas and add coriander leaves. • 12.
