For a crackin' good festive breakfast, try these quick and easy baked eggs cooked in avocado with smoked salmon. • Ingredients • 4 avocados • 200g Fishrjumpin smoked salmon • 8 eggs • Salt • Black pepper • Red chili flakes • Fresh dill • Method • 1.Preheat the oven to 220°C. Halve the avocados and remove the seed. • 2.Arrange the avocado halves on a baking tray, and line the hollows with strips of smoked salmon. Crack each of the eggs into a small bowl, then spoon the yolks and however much white the avocado will hold into the hollows. • 3.Add salt and black pepper on top of the eggs, to taste. Gently place the cookie sheet in the oven and bake for 15-20 minutes. • 4. Sprinkle chili flakes and fresh dill on top.
