Turkey Brine / Marinade, also good for Duck • This brine / marinade does a good job and no salt... Marinate 24-48 hours in an ice chest • ** UPDATED ** • 4 cups water • Add 1 jar Molasses • 1 cup Brown sugar • 2 cup Garlic powder • 2 cup Onion powder • 1/2 cup Thyme • 1/2 cup Rosemary • 4 tablespoons Chili pepper • 1/2 cup Oregano • 1/2 cup Sage • 1/4 cup Parsley • Bring to boil mixing constantly, let cool down. Dump into ice chest, add • Lemon juice from 8 lemons and lemon cores. • 1/2 cup Peppercorns • 1/2 cup Marjoram • 1/2 gallon cold orange juice • 4 Tbl Fine Grind Sea Salt • Mix well and add 6 cans Chicken broth • Add 1 20 lb bag of ice • Now add 6 turkey breast, 1 20lb turkey and stir, let sit for 24-48 hours mixing every 6-8 hours or when you remember. • NO SALT !!! • Put on smoke setting and if you have an upper rack put the breast on the rack. If not keep away from center of grill. • Smoke (I used 1/2 Apple and 1/2 Hickory) for 3 hours 150, then crank up the heat to 350. I use my digital thermometer and take it off when it beeps at 180. About 3 hours. • Let rest for 15 min and then remove the string netting. Be careful on this as it wants to fall apart. • Here you can either tear apart the breast to bite size pieces or as I do wrap it up and let sit longer. I put them in the fridge tightly wrapped so it reforms and retains the juices.
