In a commercial kitchen in the collective @sluszna_strawa in the Polish capital Warsaw, Sasha makes real Ukrainian Borscht, from her father’s recipe • • #Borscht is a soup of beetroot and cabbage, which has always been popular in Eastern Europe. • Ingredients (4-6 people): • • 3 liters of water • • 3-4 potatoes, peeled and cubed • • 2 beetroot, peeled and diced • • 1 large onion, diced • • 1-2 carrots, coarsely grated • • 1/4 head of cabbage, chopped • • 2 bay leaves • • 1 can of cooked beans • • 3 cloves of garlic, crushed • • 2 tbsp tomato paste • • 1 tbsp sugar • • 2 tsp lemon juice or vinegar • • Salt and black pepper, to taste • • Dill, for decoration • • Oil, for frying • Instructions: • 1. In a large saucepan, bring 3 liters of water to a boil, adding bay leaves. Ensure the pot is not completely full to leave room for additional ingredients. Add peeled and cubed potatoes and chopped cabbage to the boiling water. Season with salt. • 2. In a separate frying pan, dice the onion and sauté it over low heat with a little oil until translucent. Coarsely grate the carrots and beets, then add them to the onions. Simmer for 2-3 minutes, then add tomato paste, salt, sugar, and vinegar. Continue to simmer for a few more minutes until well combined. • 3. Once the water in the saucepan is boiling, reduce the heat and add the sautéed vegetable mixture. Mix well and taste, adjusting salt and adding lemon juice or vinegar for the desired acidity. • 4. Add the can of cooked beans and bring the soup to a boil. Stir in the crushed garlic and turn off the heat. • 5. When serving, sprinkle chopped fresh dill on top and add a dollop of sour cream if desired. • Enjoy ๐งก • #shorts #recipe #culture
