OEM stands for Original Equipment manufacturer. It can apply to any part of your vehicle. With auto glass this means the company who was awarded the original contract to provide that glass for that model. OEM glass manufacturers can vary from make to make (Mercedes Benz vs GMC), model to model within the same make (Mercedes ML350 vs C300), part to part (Windshield vs Door Glass), or even by region (vehicle's manufactured in the Southwest vs Northeast). When requesting the OEM part be sure to consider all OEM manufacturers for that particular part (ie Pilkington Crinamex makes the same auto glass parts for GM vehicles) as well as OEE quality parts, OEE stands for Original Equipment Equivalent. Perhaps Pilkington didn't win the contract to make the windshield for your vehicle, but still produces a replacement part at the same OEM quality you want.
