I love Ochazuke and Hitsumabushi. In high school, before any formal culinary training, I found Namiko's website and fell in love with homemade Japanese food. Later in my college years I was able to study abroad and learn from Chef Masayo, one of the first female Kaiseki chefs in Japan. My recipe today is adapted from my experiences and from these two amazing women. When/If I find fresh eel locally, I'll make another video showing everyone how to roast the eel at home! Until then, I'll still be using the frozen roasted eel from my local Asian grocery stores. • You can get frozen roasted eel at your local Asian grocery store. I get the brand Yaba and I can find it regularly at 99 Ranch Market, Hmart, and Zion. There's only 1 Mitsuwa (Japanese Grocery Store) near me and they usually have it in stock as well. Local Japanese grocery stores here in the OC are Marukai, Tokyo Central, Seiwa and Mitsuwa. • Ochazuke can be made with just dashi broth and just tea broth or a combination of both! For today's recipe we're using the combination broth. I find this combination to be more complex in flavor. I love how the roasted notes of the Hojicha (roasted green tea) enhances the flavor of the Unagi. • Furikake comes in a variety of flavors. Prepared mixes can be found in your local asian grocery stores as well. Pick your favorite furikake blend or stick with more traditional flavors like Nori Komi (seaweed/sesame), Ume Nori (pickled plum/seaweed), and Ochazuke Wakame (a blend specifically made for Ochazuke). • *The brands I used are JFC for the Nori Komi Furikake and Mishima for the Ochazuke Wakame. • This video is not sponsored.
