When roasted, garlic turns into something sweet, aromatic, creamy, spreadable and utterly dream worthy. • A head of garlic and 1 teaspoon of olive oil is all you need. Each head will yield about 1 heaping tablespoon of garlic puree. Preheat the oven to 200°C set on fan forced. Remove the outer papery covering of the garlic and slice off the top so most of the cloves are exposed. Place on a square of foil and drizzle oil over the cloves. Enclose the clove in the foil and roast for about 45 minutes, until the garlic is completely soft and lightly browned.
