Join me in making this delightful Patty Pan Summer Squash Soup. From garden to table, savour the flavour! • Stick around to the end to see how I serve it up! • ▶--------SPICES on the WEB---------◀ • Many of my viewers have asked about the packs of herbs and spices I use in my videos. • I use a supplier called “Spices on the Web” and they have most generously offered to apply a 20% discount to your total basket. • Simply add the code “DIGWELL20” to your order from https://spicesontheweb.co.uk/ for the discount to apply. • • PATTY PAN SQUASH SOUP – Serves 4 • INGREDIENTS • 2 Shallots • 2 Garlic Cloves • 1½kg Patty Pan Squash • 1 Litre Vegetable stock • To Serve • Soured cream • Sea salt flakes • Black pepper • METHOD • Slice the peeled shallots and garlic cloves. • Remove the stem end and bottoms from squashes. If the skin is tough, peel them. Chop the squashes into 1cm chunks. • Sauté the shallots and garlic in a large pan until they just take on a bit of colour. • Add the squash to the pan and sauté for another 5 minutes. • Add the stock to the pan of sautéed vegetables. • Cover and cook for 10 minutes or until the squash is soft. • Remove from heat and let rest for 10 minutes. • Use a hand blender or food processor to puree squash and stock until very smooth. • Serve with the salt and pepper sprinkled on top with a dollop of soured cream. • • ▶--------COFFEE SEEDS---------◀ • If you fancy buying me a packet of seeds or a cup of coffee to help support the channel, then here is the link. https://www.PayPal.Me/digwellgreenfin....
