Here is the step-by-step recipe: • Ingredients: • 6 lbs turkey wings and drumstick (raw - uncooked) • 8 cinnamon sticks • 8 wiri pepper • 24 cloves • 1 star anise • 1/2 cup casserip • 1/2 cup brown sugar • 1/4 cup browning • 1/4 cup molasses • Preparation: • 1. Cut each turkey wing into 2 pieces. • 2. Wash turkey wings with vinegar and drain water. • 3. Place turkey wings in large pot under medium heat. • 4. Pan fry turkey wings under medium heat in covered pot for 8-10 minutes and drain or discard rank water in the sink. • 5. For a second time, pan fry turkey wings under medium heat in covered pot for 8-10 minutes and drain or discard rank water in the sink. • 6. Return turkey wings to pot and add hot water to cover turkey meat. • 7. When turkey meat is half cooked, meaning can stick fork into meat and remove fork, then add cinnamon sticks, pepper, cloves, star anise, casserip, brown sugar, browning and molasses. • 8. Give turkey meat and seasonings a good stir to incorporate all ingredients. Add enough water to cover meat. • 9. Boil until meat is cooked, approximately 45-60 minutes. Best way to know is to give it a taste. When tasting, see if need more sugar, salt or casserip. Every person has a different preference as to how pepperpot should taste, so adjust seasonings to your liking. • 10. Every 24 hours, heat the turkey pepperpot on low heat for 10 minutes.
