How To Make Easy Delicious STRAWBERRY MERINGUE ROULADE

This Strawberry Meringue Roulade is light, airy, melt-in-your- mouth dessert. It is made of whipped egg whites that are stabilized with a pinch of salt or cream of tartar and sugar to make them fluffy. This meringue roulade is filled with pastry cream also known as custard, fresh strawberries and covered with ground hazelnuts. It is sweet, salty and nutty. Enjoy! • Tips: • When making a meringue, sugar should be absorbed entirely when done beating the whites. Test by rubbing the meringue between your two fingers to feel if it's still rough. If you cannot feel it (it is absorbed), it is ready. This is the reason to use caster or icing sugar otherwise you may use granulated sugar. • Beat the egg whites until they form stiff peaks which I explained as • when pulling the beaten eggs they firm a beak of the bird or stiff and shiny or when the bowl is overturned the contents do not spill. • You may mix on cornstarch and finely ground nuts after the egg whites have peaked. Use a spatula or spoon to gentle mix in them to avoid popping up the air in the meringue. • NB: Grinding hazelnuts in a food processor and mixing them with the meringues does not work even if you sift them with a sieve. They must be fine flour. This is the reason I sprinkled them on top of the meringue before baking. • For easy rolling of the meringue • Cool the meringue at room temperature first, covered with cling wrap then fill it with pastry cream and fruit • Be brave and roll it, even if it cracks continue, you can make it. Practise makes perfect 💖 • After rolling it, chill it in the fridge. • Baking: • Bake at 180°C or 356°F in a standard oven and if you're using a fan or conventional oven bake at 160°C for 10-12 minutes. • If you are baking at low temperature like 140°C, it will take 30-35 minutes.
