#onepanmeals #vlogmas2021 #cookwithme • Hi friends! Tonight I'm making a super easy, yet yummy one skillet dinner! Thanks for joining me in the homestead kitchen for another delicious recipe! Cheers... • Ingredients: • 3-4 TBS olive oil • 1/2 large onion, diced • 1lb boneless skinless chicken • 1-2 cloves of garlic minced • Salt/pepper • 1 cup uncooked long grain rice • 3-1/2 to 4 cups chicken broth or stock • 2 to 2-1/2 cups broccoli florets cut into bite sized pieces • 2 cups grated cheddar cheese • How to make it: • 1. In a large pan heat on low, some olive oil then add your onions saute for a few minutes until they start to soften. • 2. Once onions have softened, add your chicken to the pan turn the heat up to medium. If you're using left over chicken, your just re-heating the chicken at this point. But if your chicken is uncooked, season the chicken with salt/pepper brown the chicken pieces. • 3. Add the garlic mix well. • 4. Push chicken mixture to one side of the pan drizzle the other side with additional olive oil. • 5. Add the uncooked rice saute for a couple of minutes. • 6. Add chicken broth to the pan mix well. Bring to a boil. Lower the heat to a simmer, cover cook for 12 minutes. • 7. Add broccoli florets, season with salt/pepper, mix well. Re-cover for an additional 8 minutes. • 8. Remove from heat, stir in 1 cup of the cheddar cheese, mix well. Sprinkle remaining cheese on top cover for two minutes. • That's all there is to it!
