How to make Biltong - Part 2. • Biltong is dried, cured beef (not dehydrated), big difference in the development of flavor. Biltong named and popularized in South Africa but the origins of the recipe date back to the 17th century European settlers. My recipes use beef, but traditionally various types of meat can be used to produce biltong, including game meats. Meat is cut into thick strips (Traditional) or pencil thin strips Stokkies (Translated from the Afrikaans as “little stick”) following the grain. Traditional Biltong is sliced thin across the grain after drying, Stokkies dry quickly and are ready in short order. • This Biltong seasoning is an artful blend of organic roasted coriander, Sea Salt and herbs, and spices. • Use seasoning with the Biltong Cube drying system and produce heather delicious biltong with ease! • 2lb hole mussel beef or game meat • 3oz Coriander beef “Biltong” Seasoning • 1/3 cup malt vinegar • 1/3 cup Worcestershire sauce • BRINE • Combine Vinegar and Worcestershire with 1 tbls seasoning • CUT and Marinade • Carefully cut meat into ¾ to 1in square( Different sizes thicknesses are ok ) • Add the meat to the brine and let sit overnight in a zip-top bag or glass container. Rotate occasionally to make sure the meat is exposed to the brine. • RUB • After Bringing remove the meat from the brine and remove excess brine with paper towels • Place seasoning on a plate or container and press the seasoning into the meat, coat completely. • Please back in a clean container on a bed of paper towels and place back in the frig overnight • Getting Close • After allowing the rub the infuse the flavor to the meat overnight, hook it, and hang it to dry in the Biltong cube (follow the instructions with the cube) • For more detailed instructions watch my YouTube how to Biltong • Primal Inspired Keto is all about providing informative, entertaining videos centered around the Primal Concepts and the Ketogenic Diet / Lifestyle.
