As you know, everyone's stove is different. And every woman and man, anyone who bakes, has an intimate relationship with his or her stove. And if you find that the pie or the crust is browning a bit too much, you can either tent it with a piece of foil-- and we suggest that you don't put the foil directly on top of the filling because it will catch. • Or, one of these handy dandy, very inexpensive crust shields. • Which we made ourselves. I think a crust shield covers it. It's just a piece of foil that we cut. • And you can just measure it around and put it on top and that will protect it. I'd check it at 10 and then at 20. And if it's getting too brown at any time, you can just put this in. And when it comes out, it comes off and that's it.
