Toast the spices in a medium saucepan over medium heat. Once they are fragrant, add the apple juice, orange juice, and orange zest. Bring to a boil and reduce to a simmer. Cover and let simmer for 10-15 minutes. • 2. Add the cranberries and sugar to a Dutch oven or large non-stick skillet. Add the apple juice, straining through a fine mesh sieve. Cook over medium heat, stirring frequently, until the cranberries burst and release their juice. • 3. Transfer the compote to a food processor fitted with the blade attachment. Give it 3-5 one-second pulses to chop up the berries into a spreadable sauce. Transfer to serving dish. • This recipe can be made up to a week in advance if kept in the fridge.
