Root Beer Float Macarons Root Beer Flavored Ganache with a Secret Ingredient

Root Beer Float Ganache • Cream 130g + 60g • Sugar 50g • Vanilla Paste Paste 1 teaspoon (or to taste) • Root Beer Extract 1/2 teaspoon (or to taste) (check it out here: https://amzn.to/3XPUSTE ) • Malted Milk Powder 6g (check it out here: https://amzn.to/45NzeBs ) • Cornstarch 17g • White Chocolate 100g • Butter 55g (room temperature, unsalted) • 1. Combine 130g of cream with the sugar, vanilla, root beer extract and malted milk powder in a small saucepan. • 2. Combine the remaining 60g cream and cornstarch in a small bowl. • 3. Partially melt the white chocolate in a double boiler or in a microwave. • 4. Heat the cream mixture on medium low or low heat and whisk well to combine. • 5. When the sugar has dissolved, pour some of the hot cream over the cornstarch mixture and whisk well to combine. • 6. Transfer all of the cornstarch mixture back into the saucepan. • 7. Whisk continuously on medium low or low heat until the cream thickens - like a pastry cream or custard. Be careful not to over heat or over cook the mixture! • 8. Remove the thickened cream from the heat and pour it over the partially melted white chocolate. • 9. Let the cream and chocolate sit for a minute or two before stirring it together. • 10. Let the ganache sit at room temperature for 16-20 minutes to cool slightly. • 11. Using an immersion blender, emulsify the ganache before adding in the (room temperature) butter one piece at a time. • 12. Transfer the ganache into a new container and cover the surface on contact with plastic wrap. • 13. Let the ganache cool completely at room temperature and give it time to set up before using to fill your macarons. You can transfer it into the refrigerator for 30+ minutes or up to overnight if you want to hasten the process or are not ready to use it yet. • Interested in learning more about macaron shells?
