Bebinca or bebinka is one of the most famous desert in Goa. In fact this dessert is called as queen of the Goan dessert. The seven layers of bebinca symbolize the seven hills of Lisbon and the old city of Goa. It is usually prepared during Christmas season. • Preparation time: 30 mins • Cooking Time: 2 hrs • No.of steps: 18 • Total serves: 6 • No.of Ingredients: 7 • Recipe difficulty level: Hard • Bebinca • Queen of Goan dessert • The recipe story • Bebinca or bebinka is one of the most famous desert in Goa. In fact this dessert is called as queen of the Goan dessert. Traditionally, bebinca • has made between 7 and 16 layers,but it can be modified per one's • convenience and taste. • The seven layers of bebinca symbolize the seven hills of Lisbon and the old city of Goa. It is usually prepared during Christmas season. • Some make this bebinca with several layers and spend a whole day to bake • layer after layer. Sometimes upto 12-14 hrs. • So guys let's get started and prepare the seven layer bebinca using the • below instructions. • Ingredients needed: • Egg yolks-5 • Sugar-230g (1 1/4 cup) • Maida or all-purpose flour-80g (3/4cup) • Coconut milk - 3-4 cups (extracted from 2 cups grated Coconut) • Ghee- 4-5 tblspn • Salt-a pinch • Nutmeg powder-1/4 tsp • For caramelized sugar syrup: • Sugar-1/4cup • Water-2 tblspn +1/4 cup • How to prepare: • 1. Prepare the caramelized syrup by heating sugar with 2 tblspn of water • until it forms a caramel color. • 2. Add 1/4 cup of water to the caramel syrup and keep aside. • 3. Separate the egg yolks and beat it with sugar until frothy. • 4. Now add salt and coconut milk, give a good mix. • 5. Add maida little by little and mix well with out any lumps. • 6. Add nutmeg powder and separate the mixture into two equal halves. • 7. To one half of the mixture add the caramel and mix until combined. • 8. Now grease the baking pan with ghee. • 9. Preheat the oven at 180°c/350°F for about 15 mins. • 10. Pour 1 cup from the dark colour (caramel) mixture as the first layer. • 11. Bake it for about 10-12 mins at 180°C/350°F with both the heating rods • on. • 12. Take out once it done,apply some ghee and pour the next layer with the • mixture of light color. • 13. Now bake it for 10 mins at 180°c using only the top rod. • 14. Repeat the process by pouring alternate colour mixture and bake all the • layers. • 15. Once it done let it cool down completely for about an hour. • 16. Now run a knife through leave the sides from the baking pan. • 17. Flip it,tap gently and transfer the bebinca into the plate. • 18. Cut into slices and serve. • NOTES: • 1. Its important to preheat oven. • 2. To get even layers use a measuring cup to pour the mixture. • 3. Apply more ghee at the bottom layer,so that your bebinca won't stick with • the baking pan. • 4.
