Unbleached, all-purpose flour • 3 c. water • 1/3 c. sourdough starter • 3 tsp. salt • 1 c. Kalamata olives • A non-metallic bowl • A mixing spoon • A baking stone (optional) • Step 1: Mix culture and let it grow • The night before baking, mix 1 ½ cups of flour with 1 ½ cups of water. Then mix in 1/3 cup of sourdough starter and let that culture grow overnight. • Step 2: Combine ingredients • Combine 4 cups of flour, 3 teaspoons of salt, and an addition 1 ½ cups of water. Then, mix in 2 cups of the new starter and stir. • Tip: Keep the leftover starter in the fridge so you can re-grow it and reuse it later. • Step 3: Knead the dough • When the dough stops sticking to the bowl, place it on a floured surface and knead it for a few minutes until it's silky smooth. • Step 4: Let dough rise • Place the dough back in the bowl, cover it, and let it rise for 1 to 3 hours. • Step 5: Flatten the dough • Flatten the dough out on a floured surface and fold in a cup of lightly chopped Kalamata olives. • Step 6: Let dough rise • Divide the dough and shape them into two smooth, round loaves. Cover them and let them rise for 2-4 hours. • Step 7: Preheat the oven • Place your baking stone into the oven and preheat it to 450 degrees Fahrenheit. • Step 8: Slice pattern and bake • When the dough doubles in size, slice a pattern on the top and bake it in the oven for 35-45 minutes. • Tip: Occasionally spray inside of the oven with water to keep the bread from drying out. • Step 9: Let the loaves cool • Let the loaves cool completely.
