Thank you for supporting Pressure Crisp! • Potato Salad Recipe • 3 pounds russet potatoes-peeled and cut into to 1 inch pieces • 3 eggs • 4 cups water • 1 1/2 tsp kosher salt • 1/2 -1 Tbsp rice wine vinegar • 1/4-1/3 cup celery fine dice • 1/3-1/2 cup green pepper fine dice • 1/2 cup Visalia onion fine dice • 1- 2 Tbsp red onion fine dice • 1 cup mayonnaise-I used Hellman's • 1-2 tsp dijon mustard • 1/4-1/2 tsp garlic powder • 1/2 tsp kosher salt • 1 tsp fresh ground black pepper • 1 Tbsp rice wine vinegar • 1. Place potatoes, eggs and water into NF. Place PC lid on. Select PC LO for 0 minutes. Then do a quick release. Remove eggs and place into a bowl to cool. Strain potatoes and spread on a quarter sheet pan, sprinkle 1/2-1 Tbsp rice wine vinegar over potatoes and stir-be gentle with potatoes. Let potatoes and eggs cool. • 2. While waiting for potatoes to cool you can prepare your veg and dressing and store in refrigerator. Prepare all the veg-onions, pepper, celery, place in a bowl stir to combine. For the dressing, place mayonnaise, salt, pepper, mustard, vinegar, garlic powder and whisk together. Cover and store in refrigerator. • 3. Take the three eggs when cool and chop up to desired size I prefer. a small dice. • 4. Add veg to cooled potatoes and stir to mix, then add eggs stir to mix-be gentle not to break up potatoes. Next add dressing and stir to combine. Taste for seasoning. Place in refrigerator for flavors to meld together and enjoy!
