Lemon Cake Mix Cookies

These Lemon Cake Mix Cookies are made using a basic lemon cake box mix. They are easy and delicious. =) • More Recipes: • Playlist • Ingredients: • Lemon Cake Mix, 1 Box • 1/3 Cup of Vegetable Oil (I subbed with Canola Oil) • 2 Eggs • 1 tablespoon of Lemon Juice • Powdered Sugar • Lemon Zest • Optional: • Extra Lemon Juice and Powdered Sugar for glaze • Combine about 3/4 cups of powdered sugar with about 1 tbsp of lemon juice to create a simple glaze you can drizzle on top after the cookies are baked. This can be done on top of the powdered sugar or in lieu of. • Combine cake mix, eggs, oil, lemon juice, lemon zest and mix until well blended. Mixture will be sticky so letting the dough sit in the fridge for 1/2 hour or so will help! Shape dough into small ball shapes (any size you desire) and roll in powdered sugar. Place spread fairly apart onto parchment paper on a baking sheet. Bake at 350 for approximately 8-10 mins. DO NOT OVER COOK.
