You will need to have • something large enough to cover the mouth of the bowl (I use a pizza stone.). • •Pour heavy cream into a saucepan and heat over medium heat until bubbles begin to form around the edges. Be careful not to overheat the cream or it could scald. • •Once bubbles form, pour the hot cream over the chocolate chips and cover for 10 minutes. • •Remove the cover and whisk the cream and melted chocolate until smooth. If the chocolate doesn’t completely melt, create a double boiler and heat the bowl over stem until the chocolate melts completely. • •Set aside to cool (This could take several hours. Once it is at room temp, I generally put it in the refrigerator to completely cool.).
