Rhubarb Custard Cake • Recipe • 250g roasted rhubarb • 150g custard, plus 3 tablespoons • 250g self-raising flour • ½ teaspoon baking powder • 4 eggs • 1 teaspoon vanilla • 250g golden caster sugar • icing sugar, for dusting • 1. Line a 23cm springform tin. Preheat oven to 180°C. • 2. Beat custard, butter, flour, baking powder, eggs, vanilla and sugar until creamy and smooth. Spoon one-third of the batter into the tin, top with one-third of the rhubarb. Repeat and finish with the remaining batter and scatter with the remaining rhubarb, then drizzle the 3 tablespoons of custard on top. • 3.Bake for 40 minutes, then cover with foil and bake for a further 20 minutes.
